Matcha is whisked with a small amount of water before being combined with milk and served hot or iced. The milk softens the intensity of the tea, creating a smooth and creamy drink while still allowing the character of the matcha to come through.
For the best flavour, we prefer a gentle sweetness: a touch of maple syrup is highly recommended.

薄茶
Usucha means “thin tea” and is one of the traditional ways to enjoy matcha.
Matcha is whisked with water until smooth, usually creating a delicate layer of fine foam on the surface.
With no milk or sweetener to hide behind, Usucha allows you to experience the matcha itself — its aroma, umami, natural sweetness, bitterness and finish.
It is a beautiful way to begin exploring the differences between matcha powders.
Best for: Tasting the true character of your matcha.
濃茶
Koicha means “thick tea” and offers a completely different matcha experience.
It is prepared using considerably more matcha and less water than Usucha. Rather than being quickly whisked into foam, Koicha is slowly kneaded into a thick, silky consistency.
The result is concentrated, rich and intensely umami.
Because Koicha is so concentrated, there is nowhere for harsh bitterness or excessive astringency to hide. Matcha suitable for Koicha therefore needs to have the right depth, balance and smoothness.
Best for: Experienced matcha drinkers and discovering the deepest expression of a high-quality matcha.

There is no single “right” way to drink matcha.
